Hukad at Ayala Terraces Cebu

Kinilaw na Isda

One Friday of Lent my bestfriend and I ate in Hukad Ayala Terraces. Since it is a friday of lent then I had to order non-meat food. I started it out with a delicious bowl of Kinilaw na Isda.

Hukad Ayala Terraces never ceases to amaze me with their delicious taste of Pinoy food. My bestfriend preferred some chicken meal so he ordered the Chicken Pandan.

Chicken Pandan (I didn't eat this, Bryan did)

My experience in Hukad Ayala Terraces would not be complete without the: Sizzling Gambas. My ultimate favorite.

Sizzling Gambas (my fave)

Then a nice dish of Calamares would also add nicely to the meal for two.

Calamares

I’d rate my Hukad experience at a whopping 9/10 because of the beautiful ambiance, great service, beautifully themed place, wonderful food presentation, and value for money. We spent around 600+ for the whole meal along with drinks and bottomless rice. I would definitely go back there to try again their Sizzling Gambas and hopefully some meat dishes like the most sought after: Crispy Pata.

I’ve been in Cebu 7 months and have been to the many restaurants in Ayala Shopping Mall, Cebu City. I have tried many of the local Filipino dishes in and out of Ayala. I decided to try a restaurant called HUKAD. Hukad is located on the second level of Ayala terraces and overlooks the small grassy park area. What started as a search for ambience stopped short of nothing more than me leaving rather angry at the end of my meal. To begin with, the food took a long time to get cooked. Worse still when it came out the dish was wrong on two occasions to what was ordered. The food that I received resembled nothing more than food of a “baby food” texture and look. The serving was extremely small. I especially requested the meat be trimmed of fat (it was reiterated by in Cebuano by my friend which cant have been any clearer). What came out was a dish which was untrimmed and had blobs of exposed fat all over it! Clearly the staff are either not trained well by management in the dishes on the menu or relaying information to the cook or simply dont listen (in both english and cebuano). As a result of the two wrong dishes coming out I asked whether the waiters wages would be deducted (a common practice here in the Philippines where the staff member gets it wrong). The answer was Yes. The person was getting his wages deducted by the cost of the dishes. By my reckoning that would have been about 1/3 of his daily wage deducted by the restaurant management. As a good will gesture towards this waiter i accepted the dishes and ate them despite having a thick taste of grease on the back of my throat after from the blobs of fat which werent trimmed as requested.

My annoyance didnt there, when I complained to the staff about the quality of the food and how bad the food was in taste (absolutely tasteless), its poor presentation (which looked like mashed baby food), the degree to which they didn’t listen to what I had ordered (the fact that it was wrong twice) all i received from two staff was “yes sir.. yes sir” even when i said “your food is bad” … i received an acknowledgement of “yes sir” with a glassy eyed stare. Clearly the supervisor did not want to entertain my problems and couldn’t be bothered finding out why I was upset. The remaining staff standing around with nothing to do but gawk looked on with glazed looks.

Clearly management practices are quite unethical in respect of staff mistakes and training seems non existent. I would suggest to anyone looking for an authentic Filipino dish to try one of the many other establishments in Ayala Mall and preferably one that has better labor conditions and treatment of its staff. Hukad needs a lot of work to get its act together.

Oh my, to be quite honest, I’ve never really experienced anything wrong with Golden Cowrie or Hukad in any branch that I’ve eaten in. I must agree that the certain staff must have been untrained, it would’ve been better if you took note of his/her name. It would’ve been advisable to approach the manager. Such mediocre/ poor service should not be tolerated.

Wow, that’s not very incouraging what you had experienced in Hukad. I am going back to Cebu in 5 weeks and I am taking at least 30 people for dinner in Ayala Terraces since my sister recommended to eat one of their resto there and Hukad is one my list.

It has been almost 8 years since last time I visited Cebu and/or in Ayala. So I guess, I just have to try Hukad and see for myself.

The problem about having to try new resto, is that you always have to wait longer and food get delivered wrong due to all staff are still in learning process compare to those restaurant has been around for awhile.

Well, still looking forward going back to Cebu.

That’s true. Taking 30 people will be difficult. Most if not all restaurants will not accept large reservations (Unless you buy out as much as 25K php in one night).

Hello The Photoblogger, Just want to ask, how much will it cost me to eat with 4 people, and what are their bestseller dishes? hehehe… thanks ahead!

  7. The Photoblogger says:

@Jake Hi, around 1000+ php. I recommend the following: Crispy pata, Sizzling Gambas, fish in basket, and baked scallops. Their soups are not bad too.

I love Golden Cowrie particularly in “Hukad” in Ayala Terraces. I took my family there during my visit in Cebu and ended up going there twice because my family love it too especially my little niece love their crispy pata. I like their dinguan & halo2.

The services was good, no problem. We as a customer, just need to relax and be patient. Our 1st visit was long wait because there was lots of people becuase it was after 6pm. The 2nd time, we didn’t had to wait long because it was around 2pm-3pm.

I would love to go back there someday next time we visit Cebu in 2014.
